Masaman Paste Recipe

Serves: 12

  • 0.25 cup dry roasted unsalted peanuts
  • 2 medium shallots, sliced
  • 5 cloves garlic
  • 1-2 red chillies, or 1/2 to 1 teaspoon dried crushed chile
  • 1 thumb-sized piece galangal, or ginger, thinly sliced 
  • 1 stalk lemongrass, minced, or 2 to 3 tablespoons prepared lemongrass
  • 2 tbsp fish sauce
  • 1.5 tsp ground cumin
  • 1 tsp ground coriander 
  • 1 tsp shrimp paste
  • 1 tsp palm sugar, or brown sugar
  • 0.5 tsp whole cumin seeds
  • 0.5 tsp ground cinnamon
  • 0.25 tsp ground cardamom
  • 1/8 tsp nutmeg, preferably freshly ground
  • 1/8 tsp ground cloves
  • 1 - 3 tbsp coconut milk, for desired consistency 
  • Put it all in a blender and whizz up.
